This sparkling white wine was born in 2019 from the white Passerina and Trebbiano grapes of the older vineyards.

Alcohol: 10.5% vol

Type of soil in the vineyards: Silty sandy soils composed of iron oxides and manganese coming from underlying limestone rocks.

Vine training system: guyot and tall sapling.

Harvest period: 2nd week of September.

Spontaneous fermentation in steel. In the spring decanting, the frozen must of the same batch and vintage is added to the tank, in the following hours the wine is bottled and the second fermentation takes place in the bottle. No yeasts, enzymes or any other adjuvant for the vinification and maturation of the wine have been added. There is no “disgorgement” of the yeasts. The wine may have a light natural deposit at the bottom of the bottle.
