This rosé and still wine, born in the 2019 vintage, is produced from Cesaneseche which comes from old vineyards.

Type of soil in the vineyards: Silty sandy soils composed of iron oxides and manganese coming from underlying limestone rocks.
Vine training system: Guyot and spurred cordon.
Harvest period: 2nd week of September.
After 12 hours of maceration on the skins. Spontaneous fermentation of free-run must in vitrified concrete and amphora. Maturation in cement and amphora for 5 months. No yeasts, enzymes or any other adjuvant for the vinification and maturation of the wine have been added. Clarifying decantings were carried out according to the phases of the moon. After five/six months it is bottled and refined in the bottle for three to six months depending on the year. The wine is not filtered before being bottled and for this reason it may show a light natural deposit at the bottom of the bottle after some time.
